NUTR 121 - Human Nutrition Same as: BIOL 121 . Credits: 3 Description Description of the nature and role of carbohydrates, lipids, proteins, water, vitamins and minerals in the human body. Energy relationships and various controversies in nutrition are examined, as well as relationships between nutrition, health and disease.
Student Learning Outcomes
- Know the basic principles of nutrition science and how to apply them in real-life situations regarding food choices.
- Understand the nature, role and use of carbohydrates, lipids, proteins, water, vitamins and minerals in the human body.
- Understand dietary standards and guidelines
- Be able to interpret nutrition information and evaluate lay and peer-reviewed publications for accuracy.
- Learn the role of energy balance in weight control and the importance of physical activity and body composition.
- Be able to differentiate the nutritional needs of infants, children, adults and the elderly.
- Learn the basics of food safety.
- Complete a personal dietary assessment and other relevant activities.
