DH 122 - Nutritional Aspects in Dentistry

Description
Introduction to principles of basic biochemistry and the relationship of nutrition to oral health. Application of nutritional education to dental hygiene practice: provide nutritional assessment.

Student Learning Outcomes
  1. Discriminate biochemical processes of the human organism in terms of: (a) the classification, (b) the structure, and (c) the general chemical behavior of organic compounds.
  2. Explain the physiology and biochemistry of nutrition: digestion, absorption and metabolism.
  3. Explain the energy expenditure/food intake equation and results of imbalances thereof.
  4. Evaluate valid sources of nutrition information.
  5. Recognize macronutrients and micronutrients.
  6. Explain the use of these tools for determining an adequate diet: Recommended Daily Allowances, Food Pyramid, Dietary Guidelines for Americans (USDA), Dietary Goals for the U.S., (US Senate Select Committee), Tables of Nutritive Values of Food.
  7. Differentiate the changing nutritional needs of individuals in various stages of the life cycles: infancy, pregnancy, lactation and elderly.
  8. Analyze the relationship between diet and nutrition in oral health and various diseases.
  9. Validate consumer concerns and misconceptions regarding: (a) food-borne diseases, (b) environmental contaminants, and (c) food additives.
  10. Evaluate the nutritional status of patients by use of a computer software program.
  11. Demonstrate the implementation of effective nutritional counseling in the dental patient to reduce the risk of oral and/or systemic disease.

Prerequisite: Admission to the Associate of Science Dental Hygiene Program
