DESCRIPTION
The Pastry Arts program is a quality, professionally oriented course of study designed for students wishing to enter and/or advance in the field of pastry arts. Students are taught to master the fundamentals and techniques of baking and pastry arts with emphasis on hands-on preparation of breads, cakes and pastries.

COMPUTATION & HUMAN RELATIONS COMPONENTS
  • Computation: MATH 104B or above (except MATH 122 and MATH 123)

Student Learning Outcomes


  1. Prepare recipes using basic cooking and baking techniques.
  2. Prepare recipes using advanced baking techniques.
  3. Combine management skills with pastry skills to achieve a profit in a retail bakery.
  4. Determine how to handle various types of food in order to prevent foodborne illness.
